Today we are going to make something quite crispy, easy and appetizing – chicken tostadas. This is a layered, creamy and crunchy dish with flavored notes. One of the ingredients responsible for taste and aroma is garlic.
There are some tips on how to use garlic correctly. For example, when cooking, it is better to use grated or crushed garlic than just sliced one. In that way, garlic acquires brighter flavor and aromatic qualities, moreover, it produces a large amount of allicin, one of the main medicinal compounds that regulate cholesterol metabolism and possesses the properties of a natural antibiotic. Minced garlic has a more pronounced aroma and sharp taste when compared to sliced one. Also it is recommended to add garlic at the very end of cooking to harmonize its flavor with the rest of the ingredients as well as to preserve the optimal amount of biologically active phytonutrients. This rule does not apply to the garlic that should be fried. Keep in mind, garlic is not good for fish dishes but it is a perfect complement for meat foods. 8 crispy corn tostadas
1 can refried beans, heated
4 cups cooked and shredded chicken meat
4 ripe tomatoes, chopped
1 medium onion, chopped
2 cloves garlic, minced
3 cups iceberg or Romaine lettuce, shredded
1 lemon, squeezed for juice
¼ cup Mexican or ricotta crumbled cheese
½ cup sour cream or Greek yogurt
1 avocado (optional)
cilantro to taste
- Preheat the pan at middle heat, pour some olive oil and fry the chopped onion. Add minced garlic and give it a quick stir. Once onion is soft and golden, add chopped tomatoes and fry till they are easy to mash. Blender the tomato mixture into a smooth puree, add some salt and pepper to taste.
- Transfer tomato sauce in a bowl and mix it with chicken. Add some cilantro just for extra flavor and stir it all together gently. Sprinkle it with black pepper.
- Now it’s time for layering. Take one tostada, cover it thickly with refried beans, then top it with chicken mixture, bed it with shredded lettuce, garnish it with sour cream and crumbled cheese. You can also top a tostada with a wedge of avocado for a more creamy taste. As a finishing touch, squeeze a few drops of lemon atop of the dish. Proceed with the rest of tostadas.
