Grilled lemon chicken

People drank less concentrated lemon water for the same purposes – to be protected from cholera and other intestinal infections. Though the risk of catching cholera is extremely low, a lemon juice is still used in cooking. It is rich in vitamins such as B, C, A and P, potassium and phytoncides. Lemon essential oil affects the nervous system by increasing mood, therefore, having lemon as a houseplant is a good idea. 1/3 cup lemon juice, freshly squeezed
1/4 cup olive or vegetable oil
1 tbsp dijon mustard
2-3 cloves garlic, minced
2 tbsp red bell pepper, finely chopped
½ tsp salt
½ tsp black pepper
4 chicken breast halves
- Pour lemon juice into a large bowl. Add olive oil, dijon mustard, minced garlic, finely chopped red bell pepper, a pinch of salt and black pepper. Whisk it all together. Reserve a quarter cup of marinade to use it later, so put it aside.
- Place chicken breast halves into the remaining marinade and rotate them to be completely coated with zesty liquid. Refrigerate it overnight. If you have no time to wait so long, refrigerate the meat for at least 20 min.
- Preheat the grill at high heat. Brush it lightly with oil. Take the chicken out the marinade, drain it. Put the chicken on the grill grid and grill for 6-8 minutes on each side until the juice is clear. Now take the reserved marinade and drizzle it over the chicken occasionally while grilling.
- If the weather is not good for barbecue, this lemon chicken is also delicious when baked in the oven and served with a squeeze of fresh lemon. Serve it with rice and vegetables and some lemon sauce.
