Pear and gorgonzola salad
This is the salad scarce in ingredients, fast in cooking and rich in vitamins! A pear is a sweet fruit that is normally associated with desserts rather than spicy salads. Actually, it does not matter how you consume it, the main focus is on what you get. Pears are rich in vitamins А, В1, В2, Е, Р, РР, С, carotene, folic acid, and a range of minerals among which are cobalt, manganese, iodine, copper and zinc. Since the pear has more fructose than glucose (fructose does not require insulin for its digestion in the body), this fruit is good for people with pancreas disorders. Therefore, fresh and dried pears, as well as pear drinks, are a part of diets for obesity and diabetes. Ancient Chinese considered a pear a symbol of longevity. Pears help to remove heavy metals and toxins from the body. Combine them with wholesome walnuts and greens and you will get a unique good-for-you blend.

1 cup walnuts, toasted and chopped
4-6 cups of mixed salad greens, torn
3 pears, peeled and sliced
¼ – ½ lb gorgonzola, crumbled
½ cup dressing
3 tbsp balsamic vinegar
1 tbsp maple syrup
½ cup olive oil
1 tsp dijon mustard
pinch of salt and pepper
For the dressing
Whisk all the ingredients together until you get homogeneous vinaigrette sauce. Add salt and pepper to taste. Cool the dressing down. You can make it in advance and place in a fridge for a week. Keep it covered and whisk before using.
For the salad
- Dress greens richly with 2/3 of vinaigrette and place on a plate.
- Put sliced pears and crumbled gorgonzola over greens. You can substitute the last with any crumbly cheese such as Roquefort or Blue cheese.
- Drizzle the remaining dressing.
- Chopped toasted walnuts and put on top of the salad.
